Charoset for Passover: A Sweet Tradition

Charoset is an essential part of the Passover Seder plate. This delicious mixture represents the mortar used by the Israelites during their slavery in Egypt, but tastes much better! This recipe combines Ashkenazi and Iraqi traditions for a perfect balance of flavors.

Recipe

Ingredients:

  • 3-4 ripe apples (Hermon or Golden varieties preferred)

  • 1 cup ground nuts (pecan or walnut)

  • 150-200g pitted dates (soft dried dates, pressed dates, or even date spread)

  • Sweet red wine

  • 1/2 teaspoon cinnamon (or more to taste)

Preparation:

  1. Peel and quarter the apples, then process in a food processor or grate finely

  2. Process the dates, preferably in a food processor

  3. Mix with all other ingredients until reaching desired consistency

  4. Store in an airtight container in the refrigerator

Tips:

  • For best texture and flavor, buy apples 2-3 weeks before Passover and keep them in a basket outside the refrigerator

  • This charoset keeps in the refrigerator for up to 4 days but is best when freshly made

  • It's better to prepare small batches as needed

  • This makes a wonderful spread on matzah, especially for breakfast during the holiday!

  • You may need to adjust ingredients to achieve your preferred consistency
